Peel your ginger, I used half of the piece shown in the photo. Roughly chop the coriander (so it's easier to blend) then add all of the listed ingredients to a blender and blend until smooth.
Add extra water, one tablespoon at a time, if you feel the chutney is too thick. It should neither be too thick not too runny as the taste will otherwise become diluted.
