Cut the Tilapia fillets into small bite size cubes and dry on paper towel.
Measure the dry ingredients into a bowl and mix. Add enough cold water to make a loose but not too runny batter, whisk until smooth and lump free.
Coat the fish pieces in batter and deep fry till golden brown on both sides (about 2 - 3 minutes either side). Drain on kitchen towel and serve with your favourite dipping sauce!
