Easy Peasy Pancakes!

My children love Pancakes for breakfast or just as an afternoon treat and when they’re this easy to make I guess you have no excuse not to make them. This is a really quick tasty Pancake recipe which produces fluffy pancakes and you don’t need scales to weigh the ingredients, just a cup. You can eat these pancakes without any toppings as they’re sweet enough by themselves or you can drizzle your favourite sauce over the top; maple syrup, golden syrup, chocolate spread, honey or lemon juice. Kids love it and so will you!

 You will need: for Easy Peasy Pancakes

1 cup self raising flour
1/2 cup sugar
1 egg
1/4 cup melted butter
3/4 cup milk

Method:

Easy Peasy PancakesMeasure 1 cup of self raising flour and place in your chosen jug/bowl. I find making this mixture in a jug makes it easier to pour when it comes to frying the pancakes. Next add 1/2 a cup of sugar. Create a small well in the centre of the ingredients and add 1 egg.

Now add 1/4 cup of melted butter, I normally melt my butter in the microwave on a low setting. Finally add 3/4 of a cup of milk. You can use a hand whisk to mix this, I find using my hand held blender is quicker and smooths out lumps much more easily. If you find the batter is too thick, just add a little more milk to loosen the mixture. Your mixture should be slightly thick but runny enough to pour easily.

Heat a non stick pan over a medium flame, make sure the pan is HOT before adding your pancake mixture. Add the mixture to the middle of pan and let the batter flow outwards to form a circle, you can make the pancakes as small or as big as you like. Once the pancake has small bubbles rise to the surface you know the underside has cooked and it’s time to flip it over. Using a silicone spatula gently loosen around the edges and flip over, if you find this difficult to do greasing the pan with some butter may help. I find I’m able to turn them over without using any extra fat.

You should be able to make 10 – 12 medium sized pancakes with this mixture.

Stack your pancakes up high with alternate layers of sliced strawberries, whipped cream and drizzle maple syrup/golden syrup all over the top, scrumptious! Or use fruits of your choice along with whatever spread/sauce you prefer.

    Salam, what is a ‘cup’ equivalent to? How would I measure that?

      You’ll need to invest in actual measuring cups (find them in Wilkos or Amazon) as there is no weight equivalent since different ingredients weigh differently but the volume of one cup will be the same using a measuring cup. x

    Is it possible to replace the butter with a 1/4 cup of oil? Will it have the same taste/texture?

      Add baking powder to plain flour to turn it into self raising flour, add 2 tsp baking powder to every 150g of plain flour. x
