Curried Barbecue Wings

Let’s face it, in an ideal world none of us would have to or want to cook…..right?

We would spend less time in the kitchen and more time doing the things we love and why not, it’s totally possible when you have recipes like my Curried Barbecue Wings. I find some of my quickest and tastiest recipes are born when I’m pressed for time and just throw things together! I improvised this recipe (last year) using ingredients from my cupboard and the wings were an instant hit with my family. The smoky taste of the barbecue sauce gives these wings a distinct flavour but I didn’t want the wings to be tasting of the sauce alone, so added some ground spices to the mix. This has become a firm staple in our diets because of how simple and tasty it is to make. I cooked these wings instantly although you can marinate them ahead of time and cook them when you’re ready to. These turn out brilliant cooked in an airfryer for about 20 minutes (I own a Phillips Airfryer), but if you don’t own one, bake in the oven for 30 – 40 minutes till brown all over (I don’t normally use an oven so this is a very rough estimate).

Those of you that have followed me for a long time know that I love using sauces in my cooking, whether it be ketchup, mustard sauce, chilli sauce or soy sauce. Sauces are great because they contain seasoning and add so much flavour to your cooked dishes. Combining sauces with spices means you have a great base for a fantastic tasting dish and depending on how you like it (mild, spicy etc), you can always add a few extra ingredients to really suit your palate. For this recipe make sure you choose a barbecue sauce that you LIKE, there’s no point cooking with a sauce if you don’t like the flavour. This recipe would work for drumsticks or a small quartered chicken (cut into four pieces), but be sure to use chicken with the skin on as there is no fat added to this recipe; otherwise add some oil (maybe 1 – 2 tbsp) if you plan to use chicken without skin. I’ve used Bolsts Mild Mixed Curry powder as I find this curry powder is really complimentary to adding to Western dishes without being overpowering. If you don’t have this I’d recommend skipping and just adding more cumin powder, coriander powder and maybe a touch of chilli powder to substitute. You can cook these straight away or marinate and freeze, defrost before cooking. The amounts shown here will make enough wings for about 5 – 6 people as a buffet dinner (a few wings each alongside other dishes) or snack, if you’re planning to have this as a main meal it would be sufficient for 3 – 4 people. There’s not a lot more to say about this recipe other than I hope you love it!

Serves 4 – 6

You will need:

1kg chicken wings/niblets (washed and drained)
2 tbsp barbecue sauce
1 tbsp ketchup
1 tsp Bolsts mixed curry powder
1 tsp thyme (dried/fresh)
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp salt
coriander to garnish (optional)

Method:

Measure all the listed ingredients in a large bowl (no need to measure them into small plates like I have done, this was for demonstration only); 2 tbsp barbecue sauce, 1 tbsp ketchup, 1 tsp Bolsts Mild Mixed Curry Powder, 1 tsp thyme, 1/2 tsp coriander powder, 1/2 tsp cumin powder and 1/2 tsp salt.

Mix the ingredients and coat the chicken. Bake on an oven tray in a hot oven (gas mark 5 – 6) for 30 – 40 minutes or till brown. I usually cook mine in my Phillips airfryer at 180 degrees for approximately 20 minutes which not only results in great tasting wings, it actually cuts down the cooking time by almost half as compared to a traditional oven.

Garnish with chopped coriander if you wish and serve immediately. These wings are perfect for a buffet dinner alongside other dishes, Iftar, picnics or parties!

    Thank you, I followed the recipe but the wings didn’t seem to be that dark in colour and couldn’t really taste much of bbq flavour. Would you recommend I add more bbq flavour next time?

      Sorry you didn’t enjoy the wings but they’re not as saucy as full on BBQ flavoured as the name might suggest. If you prefer them to be more BBQ in taste then yes, next time I would suggest you add a lot more sauce, add some after cooking too to ensure the sauce isn’t cooked off. Hope you have better luck next time. x

        I have the same air fryer, and love using it, can I out foil at the bottom of the main bowl? Or does it have to be in the basket, did you poke holes?

    When cooking in the airfryer, is it safe to use foil? I never cook marinated chicken in my air fryer as it is so messy to clean up after.

      It’s not recommended to use foil, I would suggest just refraining from cooking your chicken in there if you feel it’s too difficult to clean after and stick to the oven. x
