I’ve been baking these Chocolate Brownies for years and they are a huge hit within my own family, as well as with my extended family and guests.
A brownie is a cross between a chocolate cake and a soft cookie in texture, these particular ones are very ‘cake-like’ but are moist and dense at the same time. The best thing about this recipe is that there is no real chocolate used to make it, just cocoa powder. I know some of you are thinking, “Well it can’t taste good without chocolate!”, trust me, they taste awesome! My children, nieces/nephews AND my husband really love this recipe and because it’s a tray bake, it is so straightforward and simple to make. I serve this as dessert whenever I have guests over too; I warm through the Chocolate Brownies and serve with cold ice cream, it really tastes delicious.
The recipe itself isn’t complicated and is very quick and easy to make. If you wanted to go to town with this recipe, you easily could; try adding white or milk chocolate chips, chocolate chunks or how about chopped almonds or hazelnuts? I have tried all these by the way, however I really think these Chocolate Brownies taste amazing without all of the extras. They’re also great for parties/picnics, they can be made ahead of the day and stored in an airtight container, that is if you can keep your fingers off them for long enough! Place the slices in cupcake cases/wrappers for a party and serve on a cake stand or warm through and serve with ice cream for an effortless dessert when entertaining, either way your guests will be asking for seconds. How you present and serve this dish is entirely up to you, just be creative and enjoy!
Makes 16 large squares / 20 smaller squares
You will need: for Chocolate Brownies
150g plain flour
300g sugar
4 tbsp cocoa powder
1 tsp baking powder
1 tsp vanilla extract
3 eggs
170g butter/margarine
100ml boiling water
icing sugar for dusting (optional)
Method:
Preheat your oven to gas mark 4 before starting and boil 100ml water in the kettle.
Melt 170g butter/margarine in short 15 – 20 seconds bursts in the microwave or in a pan (whatever suits you), once melted leave to one side.
Prepare a square 8 x 8 inch tin by lining with grease proof paper.
In a clean bowl sift in 150g flour, 4 tbsp cocoa powder, 300g sugar, and 1 tsp baking powder.
Mix the dry ingredients together. Add 3 eggs one at a time, followed by 1 tsp of vanilla extract.
Now add the melted butter and mix all the ingredients together using a whisk. Finally measure and add 100ml boiling water (please take care when mixing in the boiling water at this point, if you have young children helping you).
You should have a lovely glossy mixture which drops off your whisk easily. Pour the mixture into your tin and bake in the centre of your oven on gas mark 4 for 45 – 50 minutes. Remove the tin from oven and check that it’s cooked by inserting a knife/toothpick into the centre, the brownies are done when a knife/toothpick comes out clean. Leave to cool in the cake tin for 15 – 20 minutes, then take a plastic knife and loosen around the edges and remove from the cake tin. Allow the brownies to cool completely on a cooling rack once removed before slicing.
Slice the brownies into 4 sections as shown and then either into 4 x 4 slices (this will give you 16 squares) or 4 x 5 slices (this will give you 20 squares). Dust with some icing sugar for a pretty effect.
Serve your Chocolate Brownies as is or alongside ice cream and syrup for a really indulgent treat!

Hi I did pre heat the oven. And used 22cm smallest round tin. Because I had no baking baking paper I used kitchen foil unerneath the tin to wrap it off, it was dripping out.please let me know is cos cos of round tin n foil brownie didn’t come out .i really want to bake it again my children loved the bits that was cooked. By the sound of it I am assuming that you used a loose bottomed cake tin? You have to use a cake tin which has no gaps or loose parts (one piece), as suggested in the recipe, otherwise the batter will leak out as it did. Don’t use kitchen foil because it is not the same as baking paper and doesn’t behave in the same way. I suggest you try the recipe again, using a proper tin and baking paper, others have had great success with this recipe. xx

Did you use plain flour or self raising flour? The recipe specifically calls for plain flour and 1 tsp of baking powder. The brownies are supposed to rise and crack in the middle, that is one of the characteristics of a brownie. x

I used a round baking tin and also did not put any baking paper inside the tin before pouring the mixture. Brownie burnt a bit from top also it was all raw inside.I followed the method too.

Not sure, you can give it a try but there is already plenty of sugar in this recipe so it may become too sweet.
