Bangla Khodu Niramisha

Growing up in a Bengali household, my mum would often cook bottle gourd AKA Bangla Khodu for us. This vegetable is very versatile and is used to make sweet and savoury dishes. It goes well in fish, meat or vegetable dishes – this vegan dish is simple to make and pairs well with rice or flatbread. My mother in law loves this dish so much, she requested I cook it for her all summer using khodu I harvested from our garden. Let’s jump straight into the recipe:

 

You will need: for Bangla Khodu Niramisha

• 1/4 of a bottle gourd, chopped into 2cm cubes
• oil
• 1 medium onion, diced
• 1 – 1.5 tsp salt (adjust to taste)
• 1 tsp turmeric powder
• 1 tsp curry powder
• 1 tsp coriander powder
• 1 heaped tsp chopped garlic
• 4 green chillies, sliced
• a handful of fresh coriander

Method:

(How to Make Bangla Khodu Niramisha)

1. Add oil to a pan, I add enough to cover the base of the pan in a thin layer, once heated add the onion + salt, cover and cook till translucent.

2. Add turmeric, curry + coriander powder, fry out for 2 – 3 mins. Next add the chopped bottle gourd along with 1 tsp of chopped garlic, mix well, cover and leave to cook until the bottle gourd is fully cooked – if your bottle gourd is young it will cook through quickly, if it’s mature it may take longer to cook, keep adding splashes of water to help cook it through if the pan dries out at any point.

3. Add the green chillies once the gourd is cooked through and cook for 2 mins. Lastly garnish with coriander, remove from the heat and enjoy!
